Ingredients


Makes 6–8 servings
  • 1 Tbsp (15 ml) Rise & Shine Assam Black Tea
  • 1 C (250 ml) boiled hot water
  • 1 1/2 C (375 ml) raisins
  • 2 C (500 ml) self-rising flour
  • 1 C (250 ml) packed light brown sugar
  • 1/2 tsp (2,5 ml) Cinnamon (ground)
  • 1 egg, lightly beaten
  • 1/4 C (60 ml) old fashioned oats

Preparation


 
  • Adjust oven rack to middle position. Preheat oven to 350° F (175° C).
  • Steep Tea in water for 5 minutes. Strain, add raisins, and allow to cool completely.
  • Butter and flour a loaf pan, knocking out any excess flour.
  • In a large bowl, combine flour, sugar, and Cinnamon. Make a well in the middle and add the egg and tea with raisins. Gently stir to combine and pour into prepared loaf pan. Sprinkle top with oats.
  • Bake bread until top is golden-brown and a cake tester in the center comes out clean, 45 minutes to 1 hour. Let cool 15 minutes, then transfer to a wire rack to finish cooling.

Tip


 

Chef’s Tip: This recipe calls for self-rising flour, but alternatively, use all-purpose flour, with 1 tsp (5 ml) (p.1003709), 1/2 tsp (2.5 ml) baking soda, and a small pinch of salt.
