Ingredients


Makes: 6 servings
  • 12 oz (375 g) bow-tie pasta or other bite-sized pasta
  • 1 C (250 ml) Kalamata olives, pitted
  • 1/4 C (60 ml) crumbled feta cheese
  • 1 red pepper, diced or sliced
  • 1 green pepper, diced or sliced
  • 2 jars (6 oz/177 ml) marinated artichokes, coarsely chopped, marinade reserved
  • 1 recipe prepared Greek Dressing
  • Black Pepper (Grinder), to taste

Preparation


 
  • Cook pasta according to package directions.
  • Place pasta, olives, feta and peppers into a large stainless-steel bowl.
  • Add artichokes with marinade and Greek Dressing to pasta salad.
  • Season to taste with freshly ground Black Pepper and serve.

Tip


 

Tip: Stir in chopped cooked chicken or ham (great for using up leftovers), grilled shrimp, or a can of salmon or tuna.
